"Taro
Frites" - Taro chips
Ingredients:
1 taro
Cooking oil
Salt & Pepper
Preparation:
(Total preparation & cooking time: 40min.)
1. Cut the taro into thin sliced shapes
2. Cook in hot oil until golden
3. Drain the chips on paper towels
4. Adjust salt & pepper and serve. |

"Ina"
- Fried Fish Cakes
Ingredients:
450g of fresh whitebait
2 eggs
1 shallot
1/2 onion
1 clove of garlic
1 tablespoon of parsley
1 tablespoon of flour
1/2 cup of milk
Cooking oil
Salt & pepper
Preparation:
(Total preparation & cooking time: 40min.)
1. Pour the flour, eggs and milk in a medium-sized bowl
2. Mix until smooth
3. Chop very finely the onion, garlic and shallots
4. Add all the ingredients with the fish in the batter
5. Adjust the salt & pepper
6. Add the oil on a frying pan at medium heat and cook the
fish cakes until golden brown on both sides. |

"Bonbon
Coco" - Coconut lollies
Ingredients:
1/2 cup of raw sugar
1 grated coconut
1 vanilla bean
Preparation:
(Total
preparation & cooking time: 30min.)
1. Add the sugar and the vanilla bean in a saucepan on medium
heat
2. Stir until caramel form
3. Add the grated coconut and continue to stir until firm
4. Pour the mixture onto a plate and let it cool down
5. Shape the coconut into balls of lollies.

"Pua
Fei" - Cooked bananas wrapped in smoked bacon
Ingredients:
Some cooking bananas
Some smoked bacon strips
Preparation:
(Total preparation & cooking time: 40min.)
1. Puncture the cooking bananas with a fork to let the steam
escape
2. Cook the bananas in a medium heat oven for 20min.
3. Let it cool down
4. Peel and cut the bananas into 3 pieces
5. Wrap each piece with a strip of smoked bacon
6. Stick a tooth-pick through the pieces to hold them together
7. Grill in the oven on medium heat until golden.

"Firi
Firi" - Tahitian doughnuts
Ingredients:
4 cups of flour
2 tablespoons of yeast
1/2 cup of sugar
2 cups of coconut milk
1 1/2 cup of water
4 cups of peanut oil
1 pinch of salt
Preparation:
(Total preparation & cooking time: 2hrs 30min.)
1. Add the flour, water and yeast into a bowl
2. Stir until the dough is firm
3. Add the coconut milk, sugar and salt
4. Mix the dough lightly and roll it into a ball
5. Let it sit for 2 hours
6. Cut the dough into pieces and shape them into the number
8
7. Heat the oil in a deep fryer on medium heat
8. Add only a few at a time in as they will stick together
9. Cook until golden brown on each sides
10. Drain with paper towels and sprinkle some sugar on top.
